Rapini

Broccoli rabe, also known as rapini, is a weekly staple in our house. We enjoy it as a side dish, but you’re welcome to add pasta and make it a full meal. You can see exactly how I prepare it here! 

 

What you need 

  • Broccoli Rabe (2-3 bundles)

  • Garlic (4-5 cloves)

  • Olive Oil 

  • Salt 

  • Pasta of choice (optional) 

  • Feta cheese (also optional)

What you do 

  1. Boil water in a pot and add salt. While that heats, clean the broccoli rabe.

    • You want to take the leaves and tops off and throw away the stem. I like to do this part while I'm watching a show or listening to a podcast, it can take a minute so take a seat!

    • Be sure to thoroughly check for any critters hiding and rinse well. When your water is boiled, add the broccoli rabe + salt and cook until tender. These do not take very long to cook, only a couple of minutes.

  2. You can chose to have the rapini by itself or if you want pasta with this dish, you can add the pasta right into the same pot as the rapini before the rapini is fully cooked.

    • Be sure to time it correctly because you don't want to overcook the pasta or broccoli rabe. 

  3. While your rapini/pasta is boiling, clean and cut some garlic. Add oil to a pan and sauté garlic on medium heat. 

  4. Drain your pasta & broccoli rabe, leaving just a very little bit of the water in the pot. When the garlic starts to brown, remove from heat, add to rapini and carefully mix well, making sure to coat everything. 

  5. Top it off with some feta, serve and enjoy!
