Lo Mein Spaghetti

This has become a weekly meal in my home! I had a taste for lo mein but its hard to find the right noodles at my local grocery store, so I had the bright idea to use pasta noodles instead! I buy protein noodles, whole wheat, or veggie pasta to make it just a bit healthier and meet those nutritional goals that way I’m not loading up on empty carbs. Super easy and versatile, you can add whatever veggies you prefer or keep it simple.

What You Need

  • Pasta (I like protein spaghetti)

  • Garlic (minced)

  • Carrot (julienne cut)

  • Green onion (diced)

  • Sesame Oil

  • Soy Sauce

  • Teriyaki Sauce

  • Honey

  • Ground Ginger

  • Salt/Pepper

  • Crush Red Pepper (optional)

I don’t use exact measurements. Use as much of each ingredient as you’d like. If you don’t want it spicy, skip the crushed red pepper. You can always add more to taste, so start with less and add as you go.

What You Do

  1. Cook your pasta, drain and set to the side.

  2. While pasta is cooking, whisk teriyaki sauce, soy sauce, sesame oil, honey, crush red pepper, ginger

  3. Drizzle some sesame oil in a pot on medium heat.

  4. Add onions and garlic to the pot. Sprinkle salt, pepper, ginger, crushed red pepper and sauté for 3 minutes.

  5. Add your carrots and cook for a few more minutes, be sure to not burn the garlic.

  6. Add your pasta back to the pot, add the sauce mixture and toss everything together, being sure to coat the pasta.

  7. Enjoy!
