Vegetarian Sushi Bowl
I have been obsessed with this sushi bowl! Its essentially a deconstructed veggie sushi roll, minus the seaweed bc I am not to keen on the seaweed, but if you like it you can definitely incorporate it! This is a super easy recipe, taking little to no effort but is the perfect little snack to munch on throughout the day. Swap the butter and mayo for a plant based option and turn this into a VEGAN recipe! Alternatively if you’re looking to add protein you can add tuna to this dish to give it more of a sushi vibe. Plus, no rice cooker necessary! I made this with a normal pot on stove top. Here’s how:
What You Need
1 cup White rice
1 tablespoon Butter
1 Cucumber
1 Carrot
1 Avocado
1/4 cup Mayo
2 tablespoons Soy Sauce
1 tablespoon Sesame oil
1/4 cup Hot Sauce of choice (I like Cholula)
Crushed Red Pepper Flakes
Everything Bagel Seasoning
Salt
To make rice, use 1:2 ratio, 1 being rice and 2 being water. If you use 1 cup of rice, use 2 cups of water.
Make Your Rice
Make your white rice. Rinse your rice well with cold water until water runs clear. Add a table spoon of butter to a pot on medium heat. As the butter melts, add in your ratio of water. Sprinkle salt and let the water come to a boil.
As soon as water starts to boil, add in your rinsed rice and mix. Turn stove to low, cover and let your rice simmer for 10-13 minutes depending on how much rice you used.
Once time is up, fluff rice with a fork and remove from heat. You want your rice to cool, so you can complete this step the day before to save on time.
Prep
Cut your cucumbers, carrots and avocado (slice em and dice em any way you like). I’ve tried long cuts, small diced ones, its up to you on how you like them. Place them all together in a bowl.
In a separate bowl, add mayo, hot sauce, soy sauce, sesame oil, crushed red peppers, mix well. I use about equal parts of mayo and hot sauce and only a little soy sauce and sesame oil. This part may need to be modified to fit your taste, I recommend using little at a time so it does not come out too spicy from the hot sauce/red pepper flakes or salty from the soy sauce. You can always add more.
Assemble and Enjoy!
Once rice is cooled, add it to a bowl
Add your vegetables on top, mix with rice.
Drizzle spicy mayo on top and garnish with everything bagel seasoning. The mayo helps the seasoning adhere to the food. Again, less is more.
