Bruschetta
Bruschetta (broo·skeh·tuh)
is a simple side dish that can be eaten as it’s own little snack or appetizer.
Over the years I’ve tasted many versions of this dish, here is mine.
What You Need
Ciabatta Bread
Arugula
Roma Tomatoes
Mozzarella Pearls (small size)
Pesto
Oil
Vinegar
Butter
Garlic Powder
Italian Seasonings
Salt & Pepper
What You Do
Preheat oven to 400°. Place foil on baking sheet.
Butter your bread and sprinkle with garlic powder and Italian seasoning. Bake in oven for 10-15 minutes.
While your garlic bread is being made, wash produce and dice tomatoes.
In a bowl, mix tomatoes, arugula, oil, vinegar, salt and pepper. I drizzle it to taste, start light because you can always add more.
Optional step; I like to mix the mozzarella pearls in the pesto sauce and place that on your bread.
Place your pearls and bruschetta mix over your garlic bread and enjoy.
