Bruschetta

Bruschetta (broo·skeh·tuh)

is a simple side dish that can be eaten as it’s own little snack or appetizer.

Over the years I’ve tasted many versions of this dish, here is mine.

What You Need

  • Ciabatta Bread

  • Arugula

  • Roma Tomatoes

  • Mozzarella Pearls (small size)

  • Pesto

  • Oil

  • Vinegar

  • Butter

  • Garlic Powder

  • Italian Seasonings

  • Salt & Pepper

What You Do

  • Preheat oven to 400°. Place foil on baking sheet.

  • Butter your bread and sprinkle with garlic powder and Italian seasoning. Bake in oven for 10-15 minutes.

  • While your garlic bread is being made, wash produce and dice tomatoes.

  • In a bowl, mix tomatoes, arugula, oil, vinegar, salt and pepper. I drizzle it to taste, start light because you can always add more.

  • Optional step; I like to mix the mozzarella pearls in the pesto sauce and place that on your bread.

  • Place your pearls and bruschetta mix over your garlic bread and enjoy.
