Broccoli Cheddar Soup

I was obsessed with Panera’s broccoli cheddar soup and needed to perfect this recipe to make it at home! And honestly, this recipe tastes exactly like it, but better!! Making it at home costs a fraction of the price and it makes many more servings. It’s super easy and can stay in the fridge for up to 3 days after or 3 weeks in the freezer.

What You Need

  • 2 to 3 green onions

  • 2 heads of broccoli (about 4 cups)

  • 3 - 4 carrots

  • 3 - 4 stalks of celery

  • 4 cups of chicken or vegetable broth

  • 1/4 cup of butter

  • 2 cups of milk

  • 3 cups of sharp cheddar cheese (shredded)

What You Do

  1. Chop all your veggies how you like them! For this recipe, I like the carrots shredded and everything else diced medium/fine size.

  2. Add butter to a medium-high skillet. Sauté your onions, add in celery, carrots and broccoli.

  3. Add chicken/vegetable broth, bring to a boil.

  4. Reduce heat to medium-low, add the milk and stir.

  5. Once it starts to bubble, add the sharp cheddar cheese, mixing until all cheese is melted. You don’t want to boil but you want it hot enough to melt and mix all the cheesy creamy goodness together.

  6. Serve in a bowl or bread bowl & enjoy!
